This is our first week of co-op and our school starting. Things will be back to normal a little bit at a time I am sure. I am also trying to get to adjust our schedule to accomplish all that we desire to do this year. Eating healthy is on that list of things we want to do this year, however, eating cheap is too. Since the supplies and books we have purchased lately have caused the checkbook to swell, I have decided to have meals that do not break the bank to help stop the bleeding of the bank account! So here is what the Miller's will be eating:
Monday: (first day co-op and my mom's birthday) Sandwiches on way to party
Tuesday: Mexican Skillet Dinner (sausage, rice, beans, salsa) and chips
Wednesday: chicken and noodles, veggies from friends garden
Thursday: Breakfast for dinner: pancakes and sausage patties
Friday: spaghetti and meatballs, salad
Saturday: Boiled Supper: potato, green beans and polish sausage
Sunday: left overs! :)

These all sound yummy to me - can we come over for dinner one night? ;-) Our kids LOVE having breakfast for dinner too!
